You don't have to travel the world to taste some of its sweetest rewards. Dr. Tim Krupa and his wife Dawn recently opened The Chocolate Cafe in Cannon Beach, modeled after European cafes the pair visited in Paris and Prague. This cafe gives the Krupas an opportunity to share their worldly experience about chocolate with fellow chocolate lovers here on the coast. A trip to The Chocolate Cafe will not only feed your sweet tooth, it will also feed your curiosity. Chocolate varies drastically in different regions of the world and Dr. Krupa likens cultivating a taste for fine chocolate to developing a taste for fine wine. You must do a lot of tasting and compare varietals from around the world, according to Krupa. (Well, okay, if the doctor insists!) An extra dark chocolate from Colombia, you'll find, has an earthy and very strong chocolate flavor that Krupa calls "an adult chocolate," warning that this one is probably not for the first timer. From Venezuela comes the smoothest and most buttery chocolate. "And, perhaps the most distinctive," says Krupa, "are the chocolates from Indonesia, because they tend to use wood fires to roast their cacao beans, and the chocolate ends up having a slight smoky flavor."
